IntroductionKeratin (gr. Keras-horn) belongs to the highly heterogeneous family of fbrillar proteins of compact structure. Large number of disulphide bridges in keratin’s structure signifcantly influences its properties, in particular high mechanical and chemical resistance. Keratin isalso characterized with high resilience to the activity of proteolytic enzymes, such as trypsin, pepsin or papain, is water insoluble but is highly hygroscopic.
